What is a Peanut Butter Bacon Cheeseburger? Amazing! Ok, ok…. it does sound a bit weird the first time you hear it, but once you get past that, it’s something to be desired! I’m going to show you how to make this totally grain free and keto friendly.
The longest part of this process is going to be making the buns. To make these awesome low carb and grain free buns, simply use the bread recipe in the “Recipes” section (click here) and place them evenly in a burger bun pan, or you can use small 5″ pie pans. The full bread recipe yields a total of 6 buns. I recommend making all 6 and freeze the buns you don’t use for later use. The cooking time of the buns will be very close to a regular loaf, give them a check around 35-40 minutes. You’ll want to see the buns brown up slightly on top, as well as feel crisped up, not soft on top.
Now that the hard part is over, it’s time to make the rest of the burger.
Making the peanut butter sauce: Use a 2:1 ratio of avocado mayonnaise to an all natural organic peanut butter. Two parts mayo, to one part peanut butter. Taste and add more peanut butter to your liking. You want this to be creamy. If the peanut butter is too thick, it makes it hard to eat and overpowers the rest of the flavors in your burger.
Season and form the burger patties: I recommend using an 85/15 100% Grass Fed/ Grass Finished ground beef for the patties. These typically can be found in 1 lb pre-packaged cubes, making it very easy to split it up as you desire. 1/4 pound, 1/3 pound, or 1/2 pound, you can’t go wrong here! Season to your liking. I keep it simple with some onion powder, salt and pepper. Spice it up with chili powder or add garlic, have fun with it! Form them fairly flat as they will shrink and rise up.
BACON! Get that bacon cooking (2 pieces per burger) and give them a nice crisp. This will add a nice texture to the burger along with amazing flavor! When done, you can filter that bacon grease and save it to cook with at a later time.
Both the bacon and the beef patties do not take long to cook, so make these your final 2 things to cook. When the patties are near finished, add your cheese, cover pan and allow that cheese to melt completely over your patties.
While these are cooking, this is a good time to toast the buns. Slice each bun to make your top and bottom, then give them a quick broil to crisp up the centers.
You’re ready to assemble! Place the burger patty on the bottom bun, top with bacon, then add your peanut butter sauce to cover. Lastly add the pickles (completely optional), top bun, and you’re ready to rock’n’roll!!
Sides: The burger is the star of the show here, and is very filling, so whichever side you choose be sure to keep it light. A salad is a great option, or, if you want to indulge a bit, sweet potato fries are a better (low-lectin) option to regular potato fries. These are great dipped in a mix of sour cream, sriracha, and a hint of lime juice. *Pictured Above*
